Clonakilty Distillery founders, the Scully family, have farmed by this coastal land for eight successive generations. A commitment to both heritage and innovation has led us to revive ancient malting barley varieties. Privileged to be guardians of these scarce grains, we will patiently nurture them to create a range of whiskies that honors this unique inheritance.
Our fields at the base of Galley Head Lighthouse are the perfect environment to nurture and grow the finest of crops. Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates right through to each individual grain.
The water we use to cut our spirit is drawn deep from within the untouched rock formations by our ocean cliffs, naturally filtered through layers of Sandstone and Baryte. Cold unadulterated freshness, generously gifted by Mother Nature herself. This pure and special water source enhances the quality and flavour of every single drop.
HARNESSING THE PURITY OF OUR LAND AND SEA TO CRAFT SPIRITS THAT FEED THE SOUL
For our Single Batch we have used a 10 year old triple distilled malt and 8 year old grain, gently cut and finished at our Atlantic Ocean warehouse.
Nose: Soft spices, vanilla, fresh cut grass, slightly perfumed, ripe apple/pear notes. Fresh leather tones.
Palate: Warm spices – cubeb pepper and ginger. Fresh cut grass, hazelnut and almond notes.
Finish: Well-balanced Irish whiskey with spices lingering on the palate.
Port Cask Finish
For our Port Cask Finish we have used a 10 year old triple distilled malt and 8 year old grain, gently cut and finished at our Atlantic Ocean warehouse.
Nose: Fresh, ripe peaches and zesty aromas, creamy with a hint of wood character in the background.
Palate: Very fruity with peaches and zests, soft spices, some chili and cardamom in the length.
Finish: Middle long with a gentle pepperiness, the spices linger and get softer towards the end.
